Schneider 2006 Cabernet Franc le Bouchet is medium to deep color in the glass solid to the rim. The wine is a blend of 88% Cabernet Franc, 6% Merlot, 4% Syrah, and 2% Petit Verdot. Striking bouquet demonstrates a classic North Fork earth focus of birch root, pencil shavings, and tar with a core of raspberries, black cherries, and plums. Opens on the palate with black pepper, allspice, and smoke. Develops some plum and tar. Tannins are still pronounced on a medium to full bodied frame. Shows good acids to help balance the earth focus. The wine could probably age for another 2 to 4 years to realize some of the secondary notes that are beginning to emerge. Finish continues the earth and pepper themes while showing some black plum and restrained cherry. Probably too big and forceful as an aperitif. Pair with wild game, especially venison with a restrained fruit based sauce. Best to decant several hours before drinking.
