Prejean’s 2007 vintage Pinot Noir is a pale cherry color in the glass. Solid bouquet of cherry, wild strawberry, violets, and some winter spice on the nose; impressive. Palate opens with marked black cherry and raspberry jam. Develops spices with earth undertones of mushroom and birch root. Shows good fruit and ripeness. Silky textures on light to medium frame. Shows good acid bite but restrained so as not to overwhelm the fruit. Good complexity and interest. Finish exhibits classic spice and cherry descriptors with Seneca Lake mineral on a good finish. Excellent as an aperitif. Pair with game fowl or rabbit with light fruit sauces.
